Pumpkin muffin recipe ingredients:
- 7 oz. (200 grams) pumpkin, shredded
- 3 eggs
- 4 oz. (120 grams) sugar
- 3,5 tablespoons (50 ml) milk
- 3,5 tablespoons (50 ml) oil
- 10 oz. (300 grams) flour
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 3,5 oz. (100 grams) raisins

Pour water with pinch of salt over shredded pumpkin (to cover it), cook it in low heat to soften, drain and mash it.
Beat egg yolks with sugar, add milk, oil, mashed pumpkin and mix it.
Combine flour, cinnamon, baking powder and raisins and mix it in pumpkin mixture.
Beat egg whites and stir them in flour pumpkin mixture.
Pour it into greased muffin tins and bake it in preheated oven to 350 F (180°C) for about 20 minutes (or until toothpick inserted in the center comes out clean).
