Gourmet Fruit Cake Recipe with Rice

Ingredients:

  • 200 grams rice
  • 1 liter milk
  • 1 teaspoon grounded cinnamon
  • 4 egg yolks, room temperature
  • 100 grams sugar
  • 2 apples
  • 2 bananas
  • 100 grams raisins
  • 4 egg whites, room temperature
  • 4 tablespoons coconut powder

Pour rice and cinnamon in milk to boil 10 minutes, remove from heat and cool it.

Pour the raisins with hot water to be covered with and soak it ( about 15 minutes and then strain raisins), while chop up apples and bananas in fine pieces. Mix all fruits together.

Preheat oven to 350 degrees. Beat in egg yolks with 50 grams of sugar and pour it in cold rice. Pour half of rice in greased bake pan, then fruits, then other half of rice on it. Bake it about 30 minutes.

In meantime beat in egg whites with other 50 grams of sugar and coconut. After 30 minutes, pour that on the cake and bake it for 10 minutes more. Serve it warm.
