Turkish Delight Recipe – Lokum

Turkish delight recipe ingredients:
- 5 cups (1 kilogram) granulated sugar
- 5-1/3 cups (1-1/4 liter) water
- 1-1/4 cups (150 grams) cornstarch
- half lemon juice
- bergamot extract or 1.5-2 tablespoons of rose water
- 1 cup (120 grams) chopped almonds
- almond oil
- 1 cup (120 grams) sugar powder
Pour granulated sugar into 1 cup of water to boil, till sugar melt and become thick syrup. Stir cornstarch in 4-1/3 cups of water (to be without lumps) and pour it in sugar syrup. Stir it all the time on the low temperature (about 20 minutes), till mass evaporates and starts to fall off the spoon (glue like consistency). On the end, add juice from half of squeezed lemon, few drops of bergamot extract and fine chopped almonds. 
Grease pan with almond oil, pour previously made mass in it and spread it to be 2.5 centimeters (1 inch) thick. Put your Turkish delight candy in refrigerator over night. Next day cut it in cube shape and sprinkle it with sugar powder. Turkish delight or lokum is ready to be served.
Cup of coffee without sugar and lokum is great combination, cause this candy intensify taste of coffee.
Instead of bergamot extract, you can experiment with a different kind of extracts, or if you don’t like extracts, add rose water. Classic Turkish delight recipe is with rose water (without nuts) and it was used like aphrodisiac.
